Ingredients
(one person):
150g couscous
1 red pepper
1 tomato
A few leaves of fresh mint
1 bunch parsley
10 black olives
1 lemon
Salt and pepper
4 tbsp. tablespoons olive oil
preparation:
Put the couscous in a bowl, pour in the same amount of hot, lightly salted water. cover
and let rise.
In another bowl mix the tomato and pepper diced, chopped herbs, the juice of oil
lemon a little salt and pepper.
Fluff the cooled couscous with a fork. mix with the preparation and olives. refrigerate
least 1 hour or better overnight for the salad is well flavored.
